FARM TO FORK - EXPLORING THE DRIFTLESS August 16-17th, 2025

Join MPLS Meat Collective, Wisconsin Meat Collective and Chicago Meat Collective for a weekend in the treasured city of Viroqua, nestled in the driftless region of Western WI.

This rare opportunity will include:

A tour of local USDA certified slaughterhouse Nordik Meats, including witnessing the slaughter process (optional), and a pork butchery and sausage making workshop with Cecka (MPLS Meat Collective) and Anna (Wisconsin Meat Collective).

A farm tour of Harmony Valley Farms, an organic produce and livestock farm outside of Viroqua. Owners Richard and Andrea will discuss their land management decisions, CSA business, and walk us through their diversified farm at the height of the growing season.

Local cheese, charcuterie, beer, wine and dinner cooked with Wisconsin Meadows pork and Harmony Valley produce, cooked by our team and hosted by Sittin' Pretty Farm.

Tour of Driftless Provisions' commercial salumi and smoked meat production facility, plus a tasting of a selection of their excellent salumi.

The itinerary will begin at 9am on Saturday 08/16 and includes programming all day, including dinner on Saturday, with a hour long lunch break and an hour long afternoon break. Sunday 08/17 will include a mid-morning tour and optional lunch gathering.

All other meals, as well as lodging and transportation, are the responsibility of the participants. Sittin' Pretty Farms has ample lodging about 10 minutes from downtown Viroqua and will offer a discount to event participants. Viroqua has several hotels including The Hotel Fortney, the Viroqua Heritage Inn, and the Tobacco Warehouse Inn, plus many unique stays on Airbnb.
